This is a classic all- time favourite . Escoveitch pickle or pickle as if is sometimes called in Jamaica, is used to put on fried fish and many more other dishes in Jamaica.
2 onions, sliced, rings separated
Few pimento seeds
1 cup hot white vinegar
2 carrots, sliver
2 Scotch bonnet peppers
Arrange the ingredients in the glass jar (you should use a glass jar with an airtight cover). Pour the hot vinegar into the jar. Cover and let the vinegar cool completely before refrigerated.
