How to freeze fresh hot peppers

Scotch bonnet peppers

We have wide varieties of peppers in Jamaica. However, the pepper season is almost over, and it will remain non-existence for three months  or so. Therefore, its time to start freezing fresh hot peppers for the scarce months ahead. This is how I freeze my fresh hot peppers, and it works every time for me. The peppers remain fresh for months.

  1. Select fresh crisp peppers
  2. Remove stems
  3. wash peppers
  4. Air dry or pat dry with paper towel
  5. Put into a Ziploc bag that is made for freezing food
  6. Squeeze as much air from the bag before placing in the freezer
  7. keep frozen for months

Note: There is not need to blanch, slice or remove the seeds
