Jamaican roasted yam with Jerk Chicken

Roasted yam is popular in Jamaica, and goes well with jerked pork or chicken, roasted salt fish (cod fish) or any other meat of your choice.

Ingredients

1 lb. yam ( I used yellow yam, use any yam of your choice)

Wash yam then pat dry

Make a fire  using charcoal. The yam is then put on the coal for about 40-45 minutes; turning every 10 minutes or so.

When a fork can be inserted through the yam, it is roasted, remove from fire and let cool. After the yam is cooled use a sharp knife to scrape off the skin.
