Brown stew beef kidney Recipe

Jamaican brown stewed kidney, serve with boiled ground food for breakfast or cooked rice for dinner.

2 lbs. cow kidney
Salt to taste
1 tsp. black pepper
1 tablespoon soy sauce ( I used extra dark)
1 tsp. paprika
1 tsp. Badia complete seasoning
1 onion (chopped)
1 stalk escallion (chopped)
1 Scotch bonnet pepper (deseeded, chopped)
1 tsp. vegetable oil
1 cups water (maybe less)
1 clove garlic (crushed)
1 tsp. Worcestershire sauce

Remove fat and sacs from kidney. Place in a bowl with boiling water for two minutes, remove and cut kidney into bite sizes. Season with all the spices and fresh herbs

Use hand to rub seasoning into kidney, cover and allow to marinate for one hour

Heat oil in a pot on low heat. Place kidney with seasoning in hot oil, stir and cover allow to simmer for 10 minutes; (stirring occasionally)

Add water, turn up heat to medium-high and cook kidney for  for 15 minutes. Adjust the taste by adding more salt if needed. Simmer on low heat until gravy thickens

Note: Careful not to over cooked kidney or liver, unless you enjoy eating it tough
