Make 12 muffins
2 cups flour
1 tbsp. baking powder
1/3 cup brown sugar
1/2 tsp. ginger
1/2 tsp. salt
1 cup (250 mL) canned pineapple chunks, in their syrup (You will only use the syrup, discard the chunks or eat them)
1 egg, beaten
1/3 cup oil
Preheat oven to 400F (205 C). Butter or line large muffin-pan cups with paper cups. Set aside
In a bowl, mix dry ingredients. Make a well in the centre.
Strain pineapple over a second bowl. Add enough milk to pineapple syrup to make 3/4 cup or 180 mL)
Fold egg and oil into pineapple syrup and milk mixture then pour all at once into dry ingredients. With a fork, mix until batter is well-moistened.
Pour into cups. Bake in oven 20-25 minutes
