Salt mackerel with dumplings and green bananas is a typical Jamaican Saturday morning breakfast dish. My recipes are authentic Jamaican food

1 large salted mackerel
2 small tomatoes
1 small onion
Few slices hot pepper
Vegetable oil
1 clove garlic (optional)
Black pepper

1. Wash mackerel with tap water.
2. Slice mackerel and discard the head (optional)
Place mackerel in a pot of water . Boil on medium heat for about 5 minutes. This will remove the excess salt
3. Remove from pot and place into a container with cold tap water for 4-5 seconds. Drain water and set mackerel aside
4. Chop or cut onion, hot pepper, garlic and tomatoes
5. Heat skillet, pour in vegetable
6. Add onion, hot pepper, tomatoes and garlic. Stir and sauté seasoning until translucent

7. Add mackerel, sprinkle with black pepper. Stir and lower heat. Cover pot and simmer for 1 minute
8. Remove from heat and serve hot with dumpling and bananas
