Jamaican traditional stew peas recipe

Jamaican stew peas with spinners is a popular dish
2 cups red peas (red kidney beans)
1 lb. pig's tail, cut-up
1 cup coconut milk
6 pimento seeds (allspice)
1 cup flour to make spinners
2 cloves garlic
1 green hot pepper
1 stalk escallion
1 tsp. black pepper

Soak peas in water to soften (overnight is best)
Soak pig's tail in lots of water, to get rid of the salt (overnight is best)
Place pig's tail, pimento and garlic in a big pot with enough water to cover
Boil on medium heat until partially cooked
Put the flour into a bowl, add salt. Add a little water at a time, while kneading flour to make a dough. Cover and set aside

Add coconut milk, escallion, hot pepper and black pepper. Stir
Break off small pieces of the dough and roll them into spinners
Put spinners into the pot, stir and lower heat. Simmer the stew peas on low heat for another 10-15 minutes. Remove from heat and serve warm with plain cooked rice
