Oven roasted chicken with homemade jerk sauce

Tender juicy oven roasted chicken with homemade jerk sauce prepared in my Jamaican kitchen

Everyone supposed to know by now that I do not do fancy plating; just plain rustic, what you see, is what you get. Try this recipe honey and orange glazed roasted chicken

Ingredients
1 whole (3 to 4 Lb. size) chicken
3 tbsp. vegetable oil
1 tsp. all-purpose
1 tsp. black pepper
1 tsp. paprika
1 tsp. chicken season
4 or 5 tsp. homemade jerk sauce ( my homemade jerk sauce isn't overly spicy, the flavour is tolerable)

You can use this basic recipe and change it up however you like: different spices for example

 

Instructions
Preheat oven to 375 degrees F

In a small container, combine all-purpose, black pepper, paprika and chicken season. Set aside

Wash chicken with vinegar and water solution ( I am a Jamaican/Caribbean/West Indian woman. I washed everything, including eggs!)

Dry the chicken very well with a paper towel, then season the inside and outside of the chicken with salt and spices mixture

Drizzle oil on chicken, then use hands to rub oil all over the chicken. (The oil, helps to keep the chicken moist while roasting)

Rub homemade jerk sauce all over chicken

Put the chicken into a roasting pan, breast side up.cover with foil paper and marinate in the fridge for at least 30 minutes. You can truss the chicken if you want, but that's not my style

Place the roasting pan with chicken in the middle of the preheated oven and roast for an hour covered with foil paper. Remove foil paper after an hour and base chicken with pan juice.

Roast another 25 minutes, basting with pan juices again

Roast another 10 to 15 minutes, or until juice runs clear

Once the chicken has finished cooking, let it rest at room temperature for at least 15 minutes for the juices to redistribute

Carve/cut up the chicken and nyam it (eat it)
