This is Jamaican authentic brown stew fish recipe

Authentic Jamaican brown stew fish recipe

2 lbs. fish/scraped/gutted/wash only with water
1/4 cup oil to fry fish
1/4 tsp. black pepper
1/4 tsp. all purpose
1/4 cup water
1 small onion, sliced
1 stalk escallion, chopped
1 ripe tomato, sliced
1 small hot pepper, sliced
1 clove garlic, chopped
1 tbsp. ketchup, optional

Wash fish with only water, drain then pat dry using a kitcken towel or paper towel

Season fish with salt, cover and marinate for 10 minutes

Put a Dutch pot or skillet on medium low heat. Pour oil into the pot and let it become hot

Dry fish once again with towel or paper towel then place into the hot oil.
Fry fish for 10minutes (5 minutes on each side)

Once fish finish frying, pour out most of the oil, leaving around two tsp. Add onion, tomato, ecallion, garlic and hot pepper and sauté for 2 minutes or translucent. Add the spices, then the water. Cover pot and cook vegetable for 5 minutes and water reduces. Add the ketchup and then the fish. Spoon over the gravy on the fish. Cover pot and simmer for an additional two minutes. Remove pot from heat
