Ackee and chicken or chicken back is a popular dish in Jamaica. I used chicken two chicken breasts
Ingredients
2 chicken breasts
1 doz ackees or 1 tin ackee
1/2 tsp. all purpose
1/2 tsp. black pepper
1/2 tsp. paprika
1/2 tsp. badia complete seasoning
Salt to taste
1/2 onion, sliced
1 small hot pepper,sliced
1/2 red sweet pepper
1/2 yellow sweet pepper (bell pepper)
Oil
1 clove garlic
  Method
The heat should be on low, throughout the entire cooking process!
Wash chicken breasts with vinegar and water. drain then pat dry. Cut chicken breasts into strips, then cut each strip into 2 or 3 pieces.
Put chicken pieces into a container then season with all the spices,and salt . Cover and set aside for at least ten minutes.

I used freshly picked ackees from the tree. Therefore, the ackees were cleaned and then wash and boil in salted water until tender (about 10-15 minutes) Pour off the water from the cooked ackees then set aside

In a skillet pour enough oil to cover the bottom of the skillet. Fry the chicken pieces until done. Remove fried chicken pieces from skillet and set aside.
If the oil in the skillet is too much, pour off a little. Saute the onion, hot and sweet peppers and garlic in the hot oil until translucent. Add the fried chicken pieces into the pot and stir then add the cooked ackees or if using tin ackee. Sprinkle black pepper all over the ackees. Use a spoon to tender combine the ackees with the chicken then cover skillet and simmer for a 2 minutes. Remove from heat and serve.
