This is a simple baked chicken recipe. Most Jamaicans, including myself do not like using commercial products to enhance the colour of the meat. We like allowing the meat to develop its own natural colour while cooking. This recipe is so simple and hassle free. I used two leg quarters and two wings

2 leg quarters and 2 wings
2 tsps. vegetable oil
1/2 tsp. of the following spices:
chicken season
all purpose
Cajun seasoning
black pepper
complete seasoning
1 small onion, sliced
1 hot pepper, slices
2 cloves garlic, crushed

Preheat oven to 350F
Wash chicken with all-purpose flour (you can use vinegar, lime or lemon as well)then drain and pat dry using paper towel
Put chicken into a container, then season with all the spices and fresh herbs, also rub 1 tsp. of vegetable oil all over the chicken. Cover and marinate in the fridge for 15 minutes

Grease a baking dish with some vegetable oil. Arrange the season chicken neatly in the baking dish. Sprinkle the remaining 1 tsp. of vegetable oil all over the chicken

Place chicken into the preheated oven and bake for 65 minutes basting every 10 minutes.

Jook (prick) with a fork and if juice runs clear, the chicken is baked. If blood or bloody water runs from the chicken, return to oven and bake for a further 20 minutes or so.
