Tasty flavourful chicken wings fried in a small amount of oil without flour, egg nor breading. Today, is Saturday and typically I would cook , Saturday soup for my family's dinner. However, I cooked curried chicken and rice midmorning. Therefore, we are not really hungry. Chicken wing curried is equally delicious, also blueberry bread pudding is moist
3 lbs. chicken wings
1/2 tsp. of the following spices
Maggie chicken season
Badia complete season
Lawry's season salt
salt to taste
ground black pepper
I used a small amount of fresh herbs, minced into a chopper but you can use a knife instead
1/4 cup vegetable oil for frying
I searched each wing, looking for feathers, removing them if any. I cut and discard the tips, then I cut wings into two pieces.
Washed wings with vinegar water solution, drain then pat dry with paper towel (Bounty) to remove excess water
I season the wings with all the spices, salt and fresh herbs. Then cover to marinate in the fridge for at least two hours, this step is very important if you want the wings to soak up all the flavours from the spices and fresh herbs
On medium heat, place a Dutch pot (skillet) . Pour in oil and allow to become hot (not hot until it smokes). Fry the chicken wings according to the size of your pot. I fried mine into steps because the pot is small. Fry wings for about 8 minutes; turning once.
Remove from oil and drain on a wire rock or Scott calorie absorb paper towel. You can brush fried chicken wings with a sauce of your choice, for eg, sweet chilli sauce
