How to corned pork Jamaican style

How to corn pork Jamaican style. Growing up, my mother never bought corned pork because my grandmother always had homemade corned pork, which tastes much better than store purchased.

Ingredients

3 lbs. pork (Any part of the pork )

1 cup course salt

1/4 cup whole black pepper (crushed)

1/2 cup pimento seeds (allspice)

1 large onion

6 hot peppers (sliced with seeds)

10 stalks scallion (crushed)

A handful of fresh thyme

6 cloves garlic

Do not put spices on the pork

Methods

Wash pork with vinegar and water, drained then pat dry using absorbent paper. Water should not be on the pork, therefore, pat dry is very important

Put pork into a big enough container, add salt, rub salt all over the pork and then add the other ingredients. Cover container and keep refrigerated up to two weeks
