Ackee and chicken back.  You can use chicken instead of chicken back.   My family always enjoy the combination of ackee and chicken back rather than the famous Jamaican national dish ackee and saltfish. I used Best-Dressed hand cut chicken back, but chicken can be substituted. I fried the chicken back in an air fryer. However, it can also be pan fry on a stove top. In fact, that is the traditional method of frying in Jamaica.

Ingredients

2 doz. fresh ackee (cooked) or 1 tin ackee

1 1/2 lbs. chicken back

spices to season chicken back

all-purpose

black pepper

onion powder

smoke paprika

salt to taste

1 tsp. of each is good enough
