How to roast a duck in oven with crispy skin,  Jamaican style. I roasted a duck on Christmas Sunday for my family's dinner and it was amazing, totally juicy and delicious. I can only get duck to buy in Jamaica during the Christmas season, and it is pretty much expensive. I roasted a 5lbs duck. The duck, roasted 30 minutes per lb; therefore, the total cooking time is 2 1/2 hours
