Jamaican fluffy fried dumplings Jamaican Cookery

Jamaican fried dumplings

I fried dumplings using self-rising flour instead of the traditional method of using all-purpose flour and baking powder and the fried dumplings are  fluffy just the same.

I always buy self-rising flour to make it easier for my son to fry dumplings because adding all purpose flour then baking powder is a big challenge for him. So, I was up all night with AstraZeneca, that's what I called my wash belly (last born)although his father insisted that I don't call his child by that name. The name came about after I took the AstraZeneca vaccine while I was pregnant with him; I was almost nine months pregnant. I though about the risk, whether it would harm the baby but my doctor assured my husband and I. Everything would have been OK, with me and the baby. I had no side-effect and the baby is ok, except that he is extremely strong. He doesn't cry; he shrieks , I could use him as the community alarm clock.  Anyway back to the recipe.

Some people, add a tablespoon of butter or margarine and use milk to mix the flour into dough instead of water. Video recipe  below

Ingredients

2 cups self-rising flour

1/4 cup vegetable oil

1/2 cup water or less
