Jamaican sweet potato pudding recipe without flour

Jamaican traditional sweet potato pudding without flour, traditional, flour is used; the flour is used as a binding ingredient. However, there are other binding ingredients that can be used such as yam, specifically yellow yam. Some people used cornmeal, honestly speaking. I don't like cornmeal in my potato pudding. Nevertheless, if yam is not available in your area, and you do not want to use flour, use cornmeal instead. The sweet potato all by itself, will not hold together. Raisins are not added to Jamaican authentic sweet potato pudding, neither rum
Do not use the orange flesh sweet potato to make the pudding because it is too watery and soft. The best sweet potato to use is the yellow flesh. However, the purple skin variety can be use as well. I rather using fresh coconut milk than the tin (canned) one
Ingredients
2 lbs. yellow or purple flesh sweet potatoes
1 lb. yellow yam or 1 cup refined cornmeal or 1 cup all-purpose flour
2 cups coconut milk (can be more or less)
1 tbsp. vanilla
1 tbsp. mixed spice (A blend of nutmeg, cinnamon, ginger and cloves) You can buy it on Amazon
1/4 tsp. salt
4 tbsp. melted margarine or butter
1/2 cup brown sugar
Make glaze
Mix together 4 tbsp. coconut milk, 2 tsp. brown sugar and 1 tsp. vanilla flavouring. Mix well then set aside
Method
Peel and wash sweet potatoes then grate using a grater or cut each sweet potato into small chunks then grate into a food processor. Scrape blended sweet potatoes into a container
Peel and wash yam then grate using a grater or cut yam into small chunks then grate into a food processor; if not using yam, skip this step, scrape the blended yam into the container with the sweet potatoes
Combine yam and sweet potato mixture. Add sugar and coconut milk a little at a time and stir. The sweet potato mixture should not be too thick, neither too runny.
Add vanilla, salt, mix spice and melted margarine. Stir well.
I baked the sweet potato pudding into a pot (its a Jamaican style) Grease the pot and pour the sweet potato mixture into the grease pot. Bake in a preheated oven at 350F for 1 hour or until done. Twenty minutes before total cooking time, remove the pudding from the oven and pour the glaze mixture all over the top of the pudding. Return to oven to complete the total baking time.
