Shrimp fritters
This recipe is the same as saltfish fritters, used shrimp instead of saltfish (codfish)
2 cups flour
2 tsp baking powder
Pinch of salt
½ cup chopped shrimp
1 tsp. scallion, minced
water
2 tsp. onion, minced
1 clove garlic, minced
1 tsp. hot pepper, minced
1/2 tsp. black pepper
Method
Combine all ingredients, except water into a bowl and mix thoroughly
Add enough water to make a soft mixture using a table spoon.
Beat mixture until is smooth.
Using a pan or deep fryer, drop spoonful in to the hot oil and fry until all sides are brown. fry on low heat
