Lobster head meat recipe
Here is a delicious recipe for meat from lobster head that I think you'll love. Start by boiling a large pot of water, and then add a few tablespoons of salt. Add the lobster head and let the water come back to a boil. Once the head is cooked, (4 minutes) remove it from the pot and let it cool for a few minutes. Use a knife to carefully remove the meat from the head and place it in a bowl. Once all of the meat is removed, season it with your favorite spices and herbs
3 tablespoons vegetable oil
1 medium onion, finely diced
1 small Scotch bonnet pepper, seeded and finely diced
1 tablespoon Jamaican curry powder
1/2 teaspoon ground allspice
1/2 cup water
Salt and black pepper to taste
Instructions:
Heat the oil in a large saucepan over medium heat. Add the onion and Scotch bonnet pepper and cook for 5-7 minutes, or until the onion is softened.
Stir in the curry powder, cook for 1-2 minutes, or until fragrant.
Add water to the pan and bring the mixture to a boil. Reduce the heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly.
Add the lobster meat to the pan and cook for 5-7 minutes, or until the lobster is heated through.
Season the curry with salt and black pepper to taste. Serve hot with rice
