How to corned pork Jamaican style

Salting pork is a traditional method of preserving meat in Jamaica, and it is typically done by rubbing a mixture of salt and spices onto the pork and then allowing it to sit for a few days before cooking

3 lbs. pork belly or pork butt
1 cup regularly salt (you can use coarse salt if you want)
1/2 cup pimento seeds (allspice) crushed
2 tablespoons fresh thyme leaves
4 cloves of garlic, minced
4 Scotch Bonnet pepper, minced
4 stalk scallion, chopped
Instructions:

Mix together all ingredients

Rub the mixture all over the pork, making sure to cover it evenly.

Place the pork in a large resealable bag and seal it tightly or a stainless steel pot

Place the pork in the refrigerator and allow it to sit for 3-5 days, depending on the thickness of the pork and your personal preference. The longer it sits, the more flavorful the pork will be.

Once the pork has been salted, it can be cooked using your preferred method.

Also the pork should be stored in a cool place or refrigerator during the process.

Also it's important to use pork cuts with a higher fat content as they are best suitable for this preservation method as well as cooking.
