Jamaican tin Jack mackerel and rice recipe
Here is a simple recipe for Jamaican-style jack mackerel
Ingredients:
2 cans of jack mackerel, drained
1 small onion, sliced
1 small red sweet pepper, diced
1 cloves garlic, minced
1/2 teaspoon ground black pepper
1 tablespoon vegetable oil
1/2 hot pepper, diced
2 tbsp. ketchup
Instructions:
Heat the oil in a medium saucepan over medium heat. Add the onion, sweet pepper,hot pepper and garlic and sauté until the vegetables are soft, about 4 minutes.
Add the jack mackerel and stir to coat the fish with the seasoning mixture. Add the ketchup. Cover and simmer for 2 minutes. Serve hot
