Pan sear bake chicken Jamaican style
To make pan seared oven baked chicken Jamaican style you will need:
Ingredients:
Chicken pieces, cut up skin removed (optional)
4 tablespoons vegetable oil
Salt
1 tsp. ground black pepper
1 tsp. smoke paprika
1 tsp. Badia compete seasoning
1 tsp. Maggie all purpose
1 clove garlic, chopped
1 stalk skellion, chopped
1 hot pepper, seeds removed, chopped
1/2 onion, chopped
1 tsp. Old Bay
4 tbsp. ketchup
1/2 red sweet pepper, chopped
Instructions:
Wash chicken with lime juice, after removing the skin and excess fats. Drain and pat dry.
Season chicken with all the spices. Cover and marinate in the fridge for 30 minutes
Heat a large, oven-safe skillet over medium-high heat
Add the vegetable oil. Place the chicken pieces in the skillet and sear them for 2-3 minutes on each side, or until the blood stop running.
Preheat your oven to 350F.
Pour off the excess oil, return skillet to fire and sauté the skellion, onion, garlic, sweet pepper and hot pepper for 2-3 minutes. Add one cup of water to the skillet, add a little more all-purpose seasoning and ketchup. Cover skillet and let gravy simmer for 2 minutes. Add the chicken pieces to skillet or a disposable baking pan. Pour gravy over chicken. Cover disposable baking pan with foil paper. Transfer the disposable baking pan to the preheated oven and bake the chicken for 10-12 minutes, or until it is cooked through and gravy thickens. Watch video below
