Jamaican salted mackerel fried up
Salted mackerel served with boiled green bananas is a traditional Jamaican breakfast dish .
The video below is a description of a Good Friday dinner featuring salted mackerel and boiled dumplings. The cook soaks the salted mackerel in water for four hours to remove excess salt, boils it to remove more salt, then cleans and slices it. The cook sautés seasoning such as sweet peppers, onions, garlic, and tomato until translucent, then adds the mackerel, black pepper, ketchup, and water to make a sauce-like gravy. The cook covers the pot and simmers it for about 2-3 minutes. The meal is served with yellow yam, sweet corn dumplings, and ripe plantain. The video description also explains that Jamaicans often eat breakfast foods for dinner, and many Jamaicans will be preparing fried fish or bun and cheese for their Good Friday dinners
