Tamarind sauce Jamaican style

Tamarind sauce

Tamarind sauce is a tangy and sweet sauce commonly used in Asian, Middle Eastern, and Latin American cuisine

1 pound Tamarind
Enough boiling water to cover Tamarind
4 tbsp. brown sugar (adjust to taste)
1 tsp. minced onion
1 tsp. minced pepper
1/2 tsp. minced garlic
Pinch of salt
2 teaspoons freshly grated ginger
Instructions:

Remove the Tamarind from their shell and place them in a bowl.
Pour enough boiling water over the Tamarind to cover them and let them sit overnight.
The next day, remove the pulp from the seeds and strain it through a sieve to remove any remaining seeds.
In a pot on medium heat, pour in the Tamarind juice and sweeten it with brown sugar to your taste.
Add the minced onion, pepper, garlic, salt, and freshly grated ginger to the pot.
Give the mixture a stir and allow it to simmer until it thickens.
Once it has thickened to your liking, remove the pot from the heat.
Pour the Tamarind sauce into a container and let it cool before using.
