Quick and Easy fruit cake
Use fresh, frozen or canned fruit to make this fruit cake
4 cups, fresh, frozen or canned fruit
2 eggs
2 tsp. vanilla extract
1 cup brown sugar (use more if needed)
3/4 cup vegetable oil
1 cup flour
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon powder
Method
In a bowl, mix fruit, eggs, vanilla extract, brown sugar and oil. In a second bowl, sift together dry ingredients then stir into liquid mixture. Pour mixture into a greased baking pan, lined with wax paper. Bake in a preheat oven for 50 minutes at 350 F or 175 C. You can use a 8x 12 inch or 20x 30 cm baking pan
