Authentic Jamaican French Fried Chicken Recipe
- 3 lbs chicken
- Vegetable oil for frying
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp Maggie all-purpose seasoning
- 1 tsp Maggie chicken seasoning
- 1 tsp ground black pepper
- 1 tsp garlic powder
Method:
- Clean chicken thoroughly, trim excess fat, and singe any hairs from the skin. Wash in vinegar and water solution.
- Pat dry chicken, season with all spices, cover, and marinate in the fridge for an hour.
- Mix flour and baking powder, set aside.
- After marinating, dredge each chicken piece in the flour and baking powder mixture, shaking off excess. Let it rest for 2 minutes.
- Heat vegetable oil in a Dutch pot on low-medium heat.
- Place floured chicken pieces into the hot oil, frying in batches. Turn every 2 minutes until cooked through and blood stops running.
- Remove chicken from oil, drain on paper towels.
