Jamaican-Style Curry Dungeness Crab Recipe

Ingredients:
- 1 large Dungeness crab (cleaned and prepared)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 green sweet pepper, diced
- 5-6 pimento seeds (allspice)
- 1 hot pepper (Scotch bonnet or your choice), chopped (optional: remove seeds for less heat)
- 2 tbsp curry powder (divided)
- 1 tsp Maggie All-Purpose Seasoning
- 1 tsp Old Bay seasoning
- 1/2 tsp ground black pepper
- 1-inch piece of ginger, thinly sliced
- 1 cup water
- 2 tbsp vegetable oil
Preparation Steps:

Clean the Crab:
- Remove the back of the crab by lifting and detaching the shell.
- Remove and discard the gills, intestines, and other inedible parts.
- Break off the claws and separate the legs from the body. Crack the claws slightly for easier access to the meat.

Wash and Season:
- Wash the crab pieces thoroughly under running water.
- Place the cleaned crab in a bowl and season with onion, garlic, green sweet pepper, pimento seeds, hot pepper, 1 1/2 tbsp curry powder, Maggie All-Purpose Seasoning, Old Bay, black pepper, and sliced ginger.
- Mix well to coat the crab evenly. Cover and marinate for at least 20 minutes.

Cook the Crab:
- Heat vegetable oil in a large pot over low heat.
- Add 1/2 tsp of curry powder to the hot oil and stir until it darkens slightly and releases its aroma (this is called "burning" the curry).
- Add the seasoned crab to the pot. Stir well to coat the crab in the curry mixture. Cover and let cook for 2 minutes.

Add Water and Simmer:
- Pour in 1 cup of water and stir.
- Increase the heat to high and bring the mixture to a boil.
- Reduce to medium heat and simmer until the gravy thickens to your desired consistency, stirring occasionally.

Serve:
- Once the gravy is thick and flavorful, remove the pot from heat.
- Serve the curry crab hot with steamed white rice, boiled dumplings, or roasted breadfruit.
