Ingredients

Main Ingredients:

  • 12 chicken feet (yellow part removed, nails clipped, washed with vinegar and water)

  • 1 lb pumpkin (preferably curry pumpkin, peeled and diced)

  • 2 large carrots (peeled and diced)

  • 2 large Irish potatoes (peeled and diced)

  • 1 coco (taro/cocoyam) or dasheen, peeled and diced

  • 2 corn on the cob (cut into desired pieces)

  • 1 lb yellow yam (soup yam), peeled and diced

  • 6 cups water

  • 6 pimento seeds

  • 2 cloves garlic (crushed)

  • 2 packs cock soup mix (sieved)

  • 2 stalks scallion (chopped)

  • 2 sprigs fresh thyme

  • 1 green hot pepper (whole)

Optional Ingredients:

  • 1 turnip (peeled and diced)

  • 1 chocho (peeled and diced)

Dumplings:

  • 2 cups all-purpose flour

  • Water (as needed for kneading)

Instructions

Step 1: Prepare the Chicken Feet

  1. If necessary, remove the yellow skin by dipping chicken feet into hot water.

  2. Clip off the nails and wash thoroughly with vinegar and water. Set aside.

Step 2: Prep the Vegetables

  1. Peel and dice the pumpkin, carrots, Irish potatoes, coco, and yam.

  2. Wash the corn in salted water, then rinse with fresh water and cut into pieces.

Step 3: Cook the Base

  1. In a large pot, pour 6 cups of water and bring to a boil.

  2. Add pimento seeds, crushed garlic, chicken feet, pumpkin, carrots, Irish potatoes, coco, turnip, and chocho (if using).

  3. Cover and cook until the ingredients soften.

  4. Once the pumpkin is soft, use a spoon to mash it into the broth to create a rich, flavorful base.

Step 4: Add Dumplings

  1. Knead the all-purpose flour into a firm dough, then cover and let it rest.

  2. Once the soup base has thickened, add 4 more cups of water.

  3. Peel and dice the yellow yam, then add it to the pot along with the corn.

  4. Shape the dough into small dumplings and drop them into the soup.

Step 5: Final Seasoning

  1. Sieve the cock soup mix into the pot and stir well.

  2. Add scallion, thyme, and the whole green hot pepper.

  3. Stir and taste to check for salt. The cock soup mix contains salt, so additional salt may not be needed.

  4. Simmer the soup on medium heat until it reaches the desired consistency.
