Ingredients:

  • 2 green plantains, peeled and chopped
  • 4 cups water (divided)
  • 4 cinnamon leaves
  • 1 cup coconut milk
  • ½ tsp nutmeg (grated)
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ cup sweetened condensed milk (or preferred sweetener)
  • 2 tbsp Lasco milk powder (optional)

Instructions:

  1. In a pot, bring 2 cups of water to a boil with cinnamon leaves. Let simmer for 5 minutes to infuse flavor.
  2. Blend the plantain pieces with 1 cup of water until smooth.
  3. Pour the blended plantain mixture into the pot while stirring continuously to prevent lumps. Keep stirring on low-medium heat until smooth.
  4. Add coconut milk and continue cooking for about 30 minutes, stirring occasionally. If the porridge gets too thick, gradually add small amounts of water until desired consistency is reached.
  5. Mix Lasco milk powder with a little water until smooth, then add it to the porridge for extra creaminess.
  6. Reduce heat, then sweeten with condensed milk (or alternative sweetener). Add vanilla, nutmeg, and salt, stirring well.
  7. Serve hot and enjoy!

Tips:

  • For a vegan version, skip the condensed milk and use a plant-based sweetener like maple syrup or coconut sugar.

  • Adjust the thickness by adding more water or coconut milk as needed.

  • Garnish with a sprinkle of nutmeg or cinnamon for extra flavor.
