Ingredients:
- 2 green plantains, peeled and chopped
- 4 cups water (divided)
- 4 cinnamon leaves
- 1 cup coconut milk
- ½ tsp nutmeg (grated)
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup sweetened condensed milk (or preferred sweetener)
- 2 tbsp Lasco milk powder (optional)
Instructions:
- In a pot, bring 2 cups of water to a boil with cinnamon leaves. Let simmer for 5 minutes to infuse flavor.
- Blend the plantain pieces with 1 cup of water until smooth.
- Pour the blended plantain mixture into the pot while stirring continuously to prevent lumps. Keep stirring on low-medium heat until smooth.
- Add coconut milk and continue cooking for about 30 minutes, stirring occasionally. If the porridge gets too thick, gradually add small amounts of water until desired consistency is reached.
- Mix Lasco milk powder with a little water until smooth, then add it to the porridge for extra creaminess.
- Reduce heat, then sweeten with condensed milk (or alternative sweetener). Add vanilla, nutmeg, and salt, stirring well.
