How to Prepare Jamaican Curry Pumpkin and Saltfish

Step 1: Prepare the Saltfish

  • Remove the skin from the saltfish, wash thoroughly, and place in a pot.

  • Add enough water to cover the saltfish and boil uncovered for about 10 minutes to remove excess salt.

  • After boiling, drain and rinse the saltfish under tap water.

  • Set aside and allow it to cool, then use your hands to flake the saltfish as finely as possible, removing any bones.

Step 2: Cook the Pumpkin

  • In a separate pot, bring 3 cups of water with a pinch of salt to a boil over medium heat.

  • Fold in the cooked pumpkin, mashing it slightly as you mix to coat it fully with the curry and saltfish.

  • Sprinkle black pepper over the mixture and fold again.

  • Cover the pot and allow it to simmer until some of the liquid evaporates and the dish thickens.

  • Remove from heat and serve hot with white rice, roti, or your favorite side!
