This refreshing Jamaican drink is made by boiling the peel of sweet Sugarloaf pineapples with fresh ginger. It's naturally bright yellow, no sugar needed, and packed with tropical flavor. Perfect for hot summer days or as a homemade detox-style beverage.

Ingredients

  • 1 whole Sugarloaf pineapple (about 3 lbs.)
  • 3 cups water (for boiling)
  • 1/4 lb. fresh ginger (use less if you prefer mild ginger flavor)
  • Optional: Sweetener (only if your pineapple isn't sweet enough)

Instructions

Step 1: Clean the Pineapple

  • Soak the entire pineapple in tap water for 20 minutes.
  • Scrub it thoroughly with a vegetable brush, then rinse.

Step 2: Peel and Prep

  • Cut off the top and bottom of the pineapple and discard them.
  • Peel the pineapple and save the flesh for another juice or snack (freeze if storing).
  • Place the pineapple peel into a large pot.

Step 3: Boil

  • Peel and wash the ginger, then add it to the pot.
  • Pour in 3 cups of water and bring to a boil over high heat.
  • Boil for 20 minutes, then turn off the stove and allow the mixture to cool completely.

Step 4: Blend & Strain

  • Pour the boiled peels, ginger, and liquid into a blender. Blend until smooth.
  • Strain once using a fine mesh strainer.
  • Strain again using a cheesecloth for a smoother finish.

Step 5: Chill & Serve

  • If using Sugarloaf pineapple, you may not need to add sweetener—it’s naturally sweet.
  • Chill the juice or serve over ice for a refreshing drink.

Notes

  • Sugarloaf Pineapple: Only available during spring and summer in Jamaica. Extremely sweet with bright yellow flesh.
  • Ginger Strength: I use 1/4 lb. because I like it strong. Adjust to taste.
