The Quick Baking Powder Method – No Yeast Required!

Traditional Jamaican Easter bun and cheese recipe

It is almost Easter, and in Jamaica, the season simply isn't complete without bun and cheese. If you're living abroad and can't find a store-bought bun, this homemade version is your answer. While traditional buns use yeast, this baking powder version is faster, moist, and tastes just as authentic!

Dry Ingredients

  • 3 cups All-purpose flour
  • 1 ½ tsp Baking powder
  • ½ tsp Salt
  • ½ tsp Mixed spice
  • ½ tsp Cinnamon powder
  • 1 cup Raisins

Wet Mixture

  • 1 bottle Dragon Stout
  • ½ cup Malta
  • ½ cup Brown sugar
  • 1-2 tbsp Molasses
  • 2 Eggs (beaten)
  • 2 tbsp Guava jam
  • 2 tbsp Melted margarine
  • 1 tbsp Vanilla
  • Browning (to desired color)

Instructions

  1. Prep: Preheat oven to 350°F (180°C). Grease a loaf pan.
  2. Dry Mix: Sift flour, baking powder, salt, mixed spice, and cinnamon into a bowl. Add raisins.
  3. Wet Mix: Whisk stout, malta, sugar, molasses, eggs, jam, margarine, and vanilla. No heating required!
  4. Combine: Pour wet ingredients into dry. Add browning until it reaches a deep mahogany color.
  5. Topping: Fold in some mixed peel. Pour into the pan and sprinkle extra mixed peel on top.
  6. Bake: Bake for 1 hour and 10 minutes. (Check with a skewer at 60 mins).
  7. Glaze: Brush with simple syrup (warm sugar + water) immediately after removing from oven.
  8. Cool: Let it cool completely before slicing to ensure it stays moist.
Serve with a thick slice of Tastee Cheese. Enjoy!
