Creamy Jamaican Honey Mustard Mayonnaise

Ingredients

  • 2 Egg Yolks (room temperature)
  • 2 tsp. Dijon Mustard
  • 1/2 tsp. Salt
  • 2 cups Vegetable Oil (neutral flavor)
  • 2 tbsp. Wine Vinegar (divided use)
  • 1/2 tsp. Black Pepper
  • 1 tbsp. Boiling Water
  • 1 tsp. Honey

Instructions

  1. Prepare the Base: In a medium bowl, thoroughly mix the egg yolks, Dijon mustard, and salt using a wire whisk.
  2. Emulsify (The Key Step): This step requires patience! While beating constantly with the wire whisk, pour the vegetable oil in a very thin, slow trickle (almost drop by drop at first). This creates the stable emulsion. This process should take about 5 minutes.
  3. Manage Thickness: If the mixture appears too thick at any point during the oil addition, add 1 tsp. of the wine vinegar to thin it out slightly before continuing to add the oil.
  4. Finish & Season: Once all the oil has been fully incorporated and the mixture is thick and creamy, add the remaining wine vinegar (if any is left), black pepper, the 1 tbsp. of boiling water, and the honey. Stir everything together until smooth.
  5. Adjust and Serve: Taste the sauce and adjust the seasoning (salt, pepper, or honey) if needed. Store leftovers in an airtight container in the refrigerator.
