Easy Vanilla Sponge Cake (Basic Recipe)

Baking Time: 25–35 minutes
Total Time: 50 minutes

Ingredients

  • 5 eggs

  • 3/4 cup (180 ml) sugar

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 3 tbsp butter, melted

  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Butter and flour a round cake pan or a 9-inch springform pan. Set aside.

  2. Place a stainless-steel bowl over a saucepan filled with gently simmering water.

  3. Add eggs and sugar to the bowl and beat for about 5 minutes, or until the mixture thickens.

  4. Remove from heat and continue beating until the mixture cools slightly. Set aside.

  5. In a separate bowl, sift together flour and baking powder.

  6. Gently fold the dry ingredients into the egg mixture using a spatula or whisk.

  7. Gently fold in melted butter and vanilla extract.

  8. Pour batter into prepared pan.

  9. Bake for 25–35 minutes, or until a toothpick inserted comes out clean.

  10. Remove from oven. Run a knife around the edges to loosen the cake.
